Crock Pot Roast

2 - 21/2 lbs chuck roast
2 to 3 carrots
2 to 3 celery sticks
6 to 8 small potatoes
2 small onions
1 can French onion soup

In a hot skillet sear roast in olive oil. Place roast in crock pot. Pour soup over roast. Cut carrots, celery, onions, and potatoes and add to crock pot. Cook on low and when you get home from work you will have a great meal ready to eat!

Buff - A - Licious Pie

1 lb ground
Taco Season
1 - can corn
1 - can black beans
2- cans green Chile sauce
1- can rotel tomato
Mexican Cheese
Corn Tortillas

Brown meat with taco season mix, corn, beans, one can of chili, and rotel then let simmer. Place a layer of tortillas in a glass dish then layer a mixture of meat on top, cover with green Chile sauce and a layer of cheese. Repeat the layers. When done cover with cheese and place in 320 degree oven until hot and cheese is melted. The more times this is warmed up the better it is.

Buffalo Meatball Sandwich

1 medium white onion, small dice
2 Tbsp butter
1.5 lb lean ground bison
1/2 cup bread crumbs
3 large eggs
1 tsp salt
pinch each of black pepper and nutmeg
1 tsp. lemon zest
2 Tbsp chili powder (ancho powder preferred)

Saute onions in butter until golden and soft. Combine with all other ingredients, mix thoroughly. Portion meatballs using 2oz ice cream scoop. Braise meatballs in roasting pan with your favorite salsa until well done (170 degrees F internal temperature). Portion 3 meatballs per sandwich on fresh foccacia or french bread. Top with fresh salsa and apple wood smoked cheddar cheese.
Makes approximately 10 sandwiches.
